Schenectady's Hidden Gem

We don't just bake bread. We tell its story.

At Secret End, every loaf is a chapter — written with locally milled flour, wild starters, and the kind of patience that can't be rushed. This is baking as craft, not commerce.

Our Stories

Every loaf has a reason for being.

We don't follow recipes. We follow instincts — honed over years of working with flour, water, salt, and time. Each bread in our lineup exists because we couldn't find it anywhere else, so we made it ourselves.

The Everyday Sourdough

Our house starter, fed for over a decade, gives this loaf its unmistakable tang. Dense crust, pillowy interior, and a flavor that gets better the next day — in toast form, of course.

Heirloom · Stone-ground rye

The Schenectady Rye

Stone-ground rye from upstate mills, lightly sweetened with molasses and studded with caraway. Dense enough to hold anything you pile on it. A deli essential and a cheese board hero.

The Sunday Croissant

Twenty-seven layers of laminated dough, French butter, and three days of folding. We make them on Saturday mornings so they're at their peak on Sunday — when you need them most.

The Craft

Three ingredients.
Infinite patience.

Good bread doesn't need a long ingredient list. Flour, water, salt — and a wild culture we've been nurturing since day one. What we add in place of shortcuts is time: long, slow, deliberate fermentation that develops flavor no accelerator can replicate.

Locally Milled Flour

Partnered with upstate mills to source whole grains at peak freshness. Every batch is different — and that's the point.

Time as an Ingredient

72-hour cold fermentation develops complex flavors and makes our bread easier to digest. Nothing is rushed. Nothing is artificial.

Baked with Intention

Every loaf is hand-shaped, scored, and loaded into our deck oven by the same pair of hands — because consistency comes from care, not machines.
